概述
糜蛋白酶又稱為胰凝乳蛋白酶，是從牛（豬）的新鮮胰腺中提取分離出的肽鏈內(nèi)切酶。呈白色、微**結(jié)晶或無定形粉末，易溶于水，不溶于有機(jī)溶劑。相對(duì)分子質(zhì)量24000，最適PH8~9。干態(tài)穩(wěn)定，水溶液中會(huì)迅速失活，以PH3~4的水溶液為最穩(wěn)定。作用于蛋白質(zhì)時(shí)，優(yōu)先水解L-酪氨酸和L-苯丙氨酸的羧基所形成的肽鍵。
